It looks like the girls are doing ballet, to tone muscles or improve their posture, either way, it's good for models. (I took ballet classes growing up, but sadly the years of hunching over my computer screen haven't done much for my posture!)

Interesting post! Sounds like many Chinese people are rallying behind the goal of providing a hospitable, positive impression to foreigners coming to China. I must believe there is continued nervousness, like when you are inviting an important person to your home for the first time. I feel nervous, and I'm not even in Beijing or China!
